Protected by a Denomination of Origin (DO), it’s aged between 60 days and 2 years, resulting in a firm texture and a buttery, slightly nutty flavour that becomes more intense with age. Known for its distinctive basket-weave rind pattern, Manchego is versatile, enjoyed on its own, or in traditional Spanish dishes.
