John Dory

John Dory is a unique flatfish sourced from the coastal waters of the Atlantic, known for its firm, white flesh and subtle, sweet flavor. With its tender texture and striking appearance, it’s a favorite in fine dining kitchens. Ours comes from Cornwall (most commonly Newlyn), they generally arrive in May and are available until the end of September.
