Gruyère d'Alpage AOP is a rare, seasonal Swiss cheese made in summer from raw milk of cows grazing in high alpine pastures. Handmade in mountain chalets over open fires, it’s aged at least five months and known for its rich, complex flavour with herbal and smoky notes. Firmer and more aromatic than regular Gruyère, it’s protected under the AOP label and prized by cheese lovers for its limited, artisanal production.
