000 Cantabrian Anchovies

Anchovies are caught sustainably throughout the Bay of Biscay, known for their large size, firm texture & superior flavour. The best of the best are Cantabrian, and the ‘000’ in particular. This is an indication of their size, most are ‘0’ (large) or ‘00’ (very large) but ‘000’ (extra large) is saved for the biggest and best around. The larger size means each fillet packs a bigger punch in terms of the salty, umami flavour, but it’s particularly good for presentation as a tapa or atop one of your culinary creations.
