Wild Lemon Sole Fillets

A lemon sole, a red herring: this sweet, delicate flatfish is actually a type of flounder rather than a true sole, nor does it taste of lemons. It does pair beautifully with citrus, however, with its clean and subtle flavour profile and fine-flaked white flesh. Try it quick-fried in the pan with a beurre noisette, capers and grilled lemon, or with a creamy chanterelle and yuzu sauce.
