Named after the king of the gods, Zeus faber, it is also known as St. Peter Fish due to the black spots on each side said to represent the fingerprint of St Peter. The John Dory’s peculiar shape and long spiny dorsal fins make this fish seem plucked from another world, but they're really caught as a valuable by-catch along the coast of Cornwall. Beloved by top chefs, as much for its rarity as its firm, dense flesh, care must be taken not to overcook this flavourful fish. It lends itself to warm Mediterranean recipes: try it baked with a cherry tomato, caper and kalamata olive sauce.
