

Wild Dover Sole Fillets
This ‘King of Soles’ is caught by small Cornish day-boats fishing in local waters and delivered within hours, but is actually one of the few fish that many chefs say improves a day or two after the catch. For this reason, as well as its acclaimed quality and flavour, and is widely regarded as the finest flatfish in European kitchens. Stocks of this exceptional flatfish in Cornish waters are currently healthy and well-managed, thanks to the EU Sole recovery plan and the Trevose Bank closure to help safeguard spawning fish. For the best result, grilled whole on the bone to retain its succulence; once cooked, the bone releases easily, leaving two fillets on each side. Cook with a classic meunière, paired with Cornish crab or lobster.
