Cornish Red Whole Chicken
Tim and Charlie’s family-run Wiltshire farm has developed a strong reputation for their high-welfare, free-range Cornish Red chicken. Their birds are a traditional slow-maturing breed, reared with ample outdoor access and ranged for 10 days longer than standard free‑range to produce an extra‑large, extra-succulent bird. This careful, natural rearing and quality diet give the meat rich flavour, natural tenderness, and excellent roasting qualities with golden, crisp skin with tender, characterful meat. Try Gordan Ramsay’s recipe from Michelin-starred Restaurant 1890: Cornish Red Chicken, morels and asparagus, with pommes dauphine and Albufera sauce.
