Carabineros Prawns

Sourced from the deep waters of the Eastern Atlantic, these wild scarlet prawns are individually quick frozen on the boat, head-on, to lock in freshness. Coveted for their size and vivid colour, they need very little seasoning to enhance their already delicious flavour. Best treated as a delicate lobster rather than a simple shrimp, the tail yields dense, sweet flesh with a depth of flavour. Yet the true treasure lies in the head; break it apart to reveal a deep, umami-laden coral, considered a delicacy in Spain and the perfect foundation for a velvety bisque or a creamy seafood pasta.
