Parmigiano Reggiano DOP is a hard, aged cheese made from raw cow’s milk in specific regions of northern Italy, including Parma and Reggio Emilia. Protected by strict DOP regulations, it’s produced using traditional methods with only milk, salt, and rennet, then aged for a minimum of 12 months—often up to 36—for a crumbly texture and rich, nutty, savoury flavour.
